Slide peppers and onions and saute until tender and slightly browned. Add protein of choice and warm through.

Warm tostadas in low oven for a few minutes. 250f for 5 minutes or so.

Cook to eggs to desired style, I enjoy over easy.

Assemble Heuvo Rancheros, Tostadas first than peppers,onions and protein, place cooked eggs on top and garnish with cheese, sliced avocado, chopped tomatoes and salsa. Optional cilantro.
