There are times when I just - well, am too annoyed to cook. Especially if my tummy demands something great and body is too tired to hustle. The objective for this particular preparation is to be able to use the mixture of semi cooked vegetables, that can be used in most of the recipes. And the tomato preparation too, as a gravy. So when you know, half your cooking is already done, you may not feel as demotivated to cook for yourself.
What I usually use the above for: rice, seviyan pulao, at times - noodles, vegetable preparation, poha, or even upma, daaliya, daal preparation, and so on.
Psst: you may also simply use this as a sandwich filling or pizza topping, just in case, with some sauce or mayonnaise.
Here comes my saviour hack. Read on.

Cooking Instructions

Well. First things first. To store all these things, afresh and use them as is when you actually cook, you need decent containers. Whatever is the preference - steel boxes, borosil glass bowls with lids, tupperware stuff - anything. We're refrigerating anyway, but we need to lock the natural moisture in and block the dry air of the fridge from seeping in either. For balance. It's a good strategy to pre-prepare, and avoid mishaps and even quicken things up.

Here we go: chopping tomatoes - finely, very finely or coarsely; chopping the paneer block into cubes; chop capsicum and bell peppers also into cube sized pieces. Add all these in a heated frying pan, and just twirl a spoonful of either ghee or oil - as is your preference or like. For spices, I simply sprinkled jeera powder, red chilli powder and black salt. You may add, as per your wish - corriander powder, black pepper powder, saunf powder, garam masala powder, or any other dry spice powder.

Only add these in pinches - I did for my quantity. Else, you may add to suit the quantity of your veggies. Cover and cook for about 3-4 minutes, stirring maybe only once, and ensure it doesn't burn or stick to the pan. The idea is to semi-cook these things and store them, ready to be used. So I guess that reduces your overall cooking time for the main dish, by almost half. Doing this on a holiday or weekend is a good idea, when you are relaxed, fresh and have the energy.

That way, not only will you dump Swiggy, Zomato and UberEats, you will hopefully enjoy cooking. The intention of sharing / posting this hack is, I know how it feels during working week to hustle in the morning or evening for a wholesome meal; and things can get pretty indecisive. This hack has helped me a lot, I realized and it brings back the positive energy required to cook at home. Meals certainly become more enjoyable.

For the gravy, do not bother to chop the tomatoes finely - just chop randomly and put them in your mixer. Add the other things - coriander (washed, chopped coarsely, ginger - peeled, chopped, green chillies - possibly deseeded, curry leaves, of course) and make a nice fine paste. If you wish to, add a pinch of salt and also some tadka. Once it cools, pack in your container and store. Same for the veggies.

Now that you've got it together, your next meal preparation is simplified and not-so-demotivating, when you run out of time and energy to put together. This, according to me, should last you for a week, in winters, probably more. But it definitely is helpful to prepare and store. Happy cooking. Let me know if this is useful. More hacks, next time.
