Dough:Mix maida,yeast,milk powder,salt sugar, oil and milk to a crumbly texture. Add like warm water little at a time to knead to a soft dough. Knead for eight to ten minutes. Apply oil all over the dough and keep covered in a warm place for two hours.

Meanwhile prepare the filling. Take three boiled and grated potatoes. Heat one teaspoon of oil in a kadai,add mustard seeds,when they splutter,add coarsely chopped chillies and garlic,add potatoes,salt and turmeric powder. Cook for two to three minutes. Switch off gas and cool.

Spicy chutney: In s small grinder grind a handful of coriander,ginger, garlic,chillies,salt,lemon juice and very little water. Make a thick chutney.

Now remove the dough. Lightly punch it. Divide into 2. Roll them in rotis. Place one on the greased baking tray. Spread chutney all over evenly. Now place s small sized potato mix in the centre. Leaving approximately one inch gap from the potato ball form a ring shape of the remaining potato mix.and

Now place the second roti over it carefully. Place a small inverted bowl in the centre over the potato ball. Press edged with a fork to seal the dough.

Now with a sharp knife divide the dough into four equal parts and then into eight. Carefully lift each piece up and twist and place it back. Don't break it from the centre. Do all parts in this way. Remove the bowl placed in the centre. Keep it covered in a warm place for about thirty minutes.

Preheat oven at 180 degrees for ten minutes. Give a nice milk wash to sunflower. Sprinkle some sesame seeds on the centre done.

Now bake for fifteen to twenty minutes or till you get golden colour. Remove from oven and brush with melted butter mixed with chopped coriander. Ready. Serve hot.
