Baked Potato Raita

Had some baked potatoes from the dinner last night. No one was willing to have it again for lunch so I created this raita and we loved it. Sprinkled some smoked paprika that added to the magic.
Serve it as a side dish or just have it anytime to curb the hunger pangs. Mine was served with some raw mango rice and delicious cauliflower koftas.

Wash the potato well. Use a knife and poke all over it. Bake it in a preheated oven at 180 degrees for 20 minutes. I had some leftover baked potatoes that I have used.

Cool the potato, peel it and make cubes.

In a bowl whisk yoghurt lightly along with salt and sugar to make it lump-free. Add potato and chopped mint leaves, reserving a few to garnish.

Transfer it to serving bowl, sprinkle cumin powder, chat masala and smoked paprika. Drizzle some tamarind chutney.

Garnish with mint leaves and crunchy salted boondi just before serving.
