You might think this is a strange combination... I wanted to make tiramisu, but I was looking for something a little different. I’ve tried making tiramisu in a thousand ways—chocolate, strawberry, matcha, barley, and more. But I had never tried this version before, and it has a fresh, fragrant flavor that bursts in your mouth. I used freshly picked clementines, so you can imagine the aroma. For the base, I used pandoro, but you can use whatever you prefer—ladyfingers, sponge cake, or any soft cake. To flavor the cream with mandarin, simply add the zest of one untreated mandarin at the end.

For the syrup, add the water, sugar, and mandarin juice to a small saucepan. Bring to a boil and let it boil for about 3 minutes. Let the syrup cool.

On a serving plate, use a springform ring to assemble the tiramisu. I used pandoro and lined the sides as you would for a Charlotte, taking advantage of the star shape.

Brush the pandoro with the mandarin syrup and add a layer of cream. Add another layer of pandoro, brush with syrup, and add more cream.

For the final layer of cream, you can use a piping bag to distribute it, as I did. Decorate as you like. I used mandarins, cape gooseberries, and powdered sugar.
