Ingredients

1aubergine
Good quality extra virgin olive oil
2-3 clovesgarlic
Fresh parsley
Fresh chilli
Pinchsalt

Steps

Wash and slice aubergine. Grease a pan with just a little oil. Cook on medium heat until brown on both sides

Slice lengthwise and add to a bowl. Chop the garlic, chilli and parsley. Add it all in with a pinch of salt.

Add a good amount of olive oil. Mix well and leave in the fridge for a few hours, Sooooooooo tasty 😀
