Steps

Preheat the oven to 170º C. Prepare two cake tins by applying butter and dusting with a little cocoa powder.

Combine all the dry ingredients in a bowl (flour, sugar, cocoa, baking powder, baking soda, salt and coffee powder). Using a sieve, sift the ingredients in order to get rid of any lumps. Keep aside.

In another bowl, whisk 2 eggs and then add vanilla extract. To this, add the milk and vegetable oil and whisk together.

In the second bowl, slowly incorporate the dry ingredients in the first bowl to form the cake batter. At this stage, add 1/2 cup of boiling water to the batter and mix well.

Distribute cake batter evenly between the prepared cake pans.

Bake for 25-30 minutes, until a skewer/toothpick inserted in the centre of the chocolate cake, comes out clean.

Remove from the oven and allow to cool for about 10 minutes. Serve as it is, or with some ice cream or sauce of your choice 🙂
