Separate the egg whites from the yolks.

Mix the yolks with the shredded cheese, cottage cheese or Greek yogurt, salt, and pepper.

Beat the egg whites until stiff peaks form, then gently fold them into the yolk mixture.

Heat a little olive oil in a skillet. Pour in the egg mixture and cook for a few minutes. Flip the omelet halfway through cooking. Serve the omelet golden brown.
