First, whip the heavy cream until it forms soft peaks. In a separate bowl, beat the cream cheese until smooth. Gently fold the whipped cream and cream cheese together, then pour the mixture into a mold and refrigerate until set. Mix the agar powder with the sugar. Bring 8 1/2 cups (2 liters) of water to a boil, then slowly add the sugar and agar mixture, stirring constantly. Skim off any foam and continue stirring until the agar is completely dissolved.

Add food coloring as desired and use flower-shaped molds for decoration. Pour the mixture into a rectangular mold to create a calendar shape, layering the green pandan and white coconut mixtures. Place the cheesecake layer in the center.

Once the agar is set, remove it from the mold. Arrange the flower shapes and any decorative mice on top of the cake as you like.
