Take sooji, salt, curd in a mixing bowl. Add water to adjust the consistency. Make a smooth batter. Just before putting the batter into idli moulds add a packet of ENO give it a stir

Grease the idli mould with ghee or oil.put the batter in the moulds and steam till it is cooked. (I have used small idli mould if you are using big idli mould you can cut them into four). Once the idli are cooked de mould then with the help of spoon or knife

Heat a pan add oil, add the mustard seeds when it crackles add the green chilli slits and curry leaves now add all the vegetables julians once it is partially cooked add the idli in it season it with salt pepper and cumin powder.

Serve hot with coconut chutney or coriander and mint chutney
