One of my husband's favorite dinners, and it's also very easy.
Steps

Slice the bolillo rolls in half and spread butter on each half. Toast them on a griddle or skillet until golden.

While the bread is toasting, heat the refried beans and cook the chorizo. Have the shredded cheese ready.

Once the bread is toasted, top each half with avocado, refried beans, chorizo, and finally the shredded cheese. Microwave or bake briefly until the cheese melts. Serve with pickled peppers or salsa if you like.
