Apple Pie

I still have the roses Sridhar sent me for the first Valentine. It was quite a few years ago. Sridhar loves Apple Pie. Though not a great baker, I do bake Apple pies for him. Granny Smith is good for making pie. It has a great flavor and taste. Being a health food nut, I did not peel the apple, but cored it. I made the filling with apple slices, brown sugar, all purpose flour and melted butter; spiced with nutmeg, cinnamon, and cardamom. Used corn starch for thickening. I made the filling in microwave oven. I used store-bought pie shells to save time and energy. I used one shell for pie filling. rolled the other, cut into ribbon like pieces, made the lettuce upper crust. I baked the pie in an electric oven nearly for 45minutes at 400F (200C). Pie was really delicious. We enjoyed eating the pie with ice cream. #book

Make a checklist. Collect all ingredients; keep them within your reach

Thinly slice apples. Transfer the apple slices to a microwave safe bowl. Stir in the rest of ingredients. Mix them well with a spatula. Cook in the microwave oven or on the stove top stirring every five minutes. When you cook in the microwave you do not have to worry about the filling getting burnt. After the filling thickens, rest it to come to room temperature. If for some reason you cannot make the pie on the same day, you may refrigerate the filling.

Preheat the oven, when the filling is cooking. Set the temperature to 400F or 200C.
Keep one of the crusts or shells for the filling. Roll out the other, cut it into ribbon like strips to make the lettuce pie top. Transfer the filling to the shell. Arrange the cut strips over the top. Make a lettuce. (photo) - 4
Bake the pie for 40-45 minutes. Check whether it is done. Since the filling has been already cooked, just tap the lettuce; it should be crisp and golden brown. If not bake for 15 more minutes. Do not burn the crust. I am a vegetarian. I did not use egg wash on the pie top, instead when the pie came out of the oven, I brushed the crust with honey. sprinkled sugar on the top. Let it cool at room temperature for an hour or so before serving. Always taste before serving. Serve with ice cream.
