Green garlic sabzi

#goldenapron3
Week 5
This is typically a winter special sabzi in terms of availability of ingredients as well as in terms of heat the ingredients can generate in the body. It is ideally served with bajri rotla loaded with ghee. Jaggery complements well too. It is a very good way of eating a whole lot of green garlic at one go.

Steps
- 1
Combine turmeric, ginger, garlic cloves and onion in a blender jar and make paste. Take it out and make tomato paste using the same blender. Do not use water to blend.
- 2
Heat oil in a pan. Add cloves, cinnamon stick and bay leaf. Fry them till they leave aroma. Add onion-garlic-ginger paste and fry till the paste changes colour. Add 1 cup green garlic and fry for a minute.
- 3
Add ghee. Now add tomato paste, mix well. Add spices and salt.
- 4
Combine everything well and cook till the mixture oozes oil. Add remaining 1/2 cup fresh garlic in the last stage and then remove from heat. Serve hot.
