Take olive oil in pan and put all veggies and saute for 2 minutes. Now add mushrooms and saute for a min.

Now add rice and saute on medium flame. When a crackling sound comes out of pan add vegetable stock or simply heated water in it. Cook on medium flame. Don't add water at one time, gradually add water and continue cooking.

When rice starts looking cooked add salt, pepper and finally cheese and cream in it and keep on flame for a minute or two. Your healthy, yummy rissoto is ready to serve.
