Polenta pizza is a complete meal, combining the carbs from polenta, protein from mozzarella, and fiber from mushrooms (and from the polenta itself, since I used the whole grain version). Ingredients

Serves 3-4 servings
  1. 1 cupwhole grain instant polenta (160 grams)
  2. 3/4 cuptomato purée (200 ml)
  3. 2 2/3 cupswater (630 ml)
  4. 2 cupsfrozen mixed mushrooms (300 grams)
  5. 1ball buffalo mozzarella
  6. 1 tablespoonolive oil
  7. 1garlic clove
  8. 2 tablespoonstomato paste
  9. Salt

    Bring 2 2/3 cups (630 ml) lightly salted water to a boil. Gradually whisk in the polenta. Cook the polenta according to the package instructions, stirring constantly. Once cooked, transfer the polenta to a lightly oiled pizza pan or a pan lined with parchment paper. Spread it out evenly to form a pizza shape. Let it cool.

    Meanwhile, in a skillet, heat the olive oil with the garlic clove. Add the mushrooms and cook for about 5 minutes. Season with salt, then add the tomato purée mixed with the tomato paste and a little hot water. Cook the sauce for about 30 minutes.

    Top the polenta with the prepared mushroom sauce and add diced buffalo mozzarella. Bake at 400°F (200°C) for 10 minutes, until the mozzarella is melted. Serve the polenta pizza hot.
