Polenta Pizza with Mushroom Sauce

Polenta pizza is a complete meal, combining the carbs from polenta, protein from mozzarella, and fiber from mushrooms (and from the polenta itself, since I used the whole grain version). Bring 2 2/3 cups (630 ml) lightly salted water to a boil. Gradually whisk in the polenta. Cook the polenta according to the package instructions, stirring constantly. Once cooked, transfer the polenta to a lightly oiled pizza pan or a pan lined with parchment paper. Spread it out evenly to form a pizza shape. Let it cool.

Meanwhile, in a skillet, heat the olive oil with the garlic clove. Add the mushrooms and cook for about 5 minutes. Season with salt, then add the tomato purée mixed with the tomato paste and a little hot water. Cook the sauce for about 30 minutes.

Top the polenta with the prepared mushroom sauce and add diced buffalo mozzarella. Bake at 400°F (200°C) for 10 minutes, until the mozzarella is melted. Serve the polenta pizza hot.
