Mutton Do Pyaza is made by cooking mutton with lots of onions and spices. It's very easy to make.
Steps

First, wash and clean the mutton thoroughly.

Heat oil in a pressure cooker. Add bay leaves, cumin seeds, dried red chilies, black peppercorns, cloves, cinnamon stick, green and black cardamom. Sauté until fragrant.

Add the sliced onions and sauté until they turn light golden brown.

Add the mutton and salt. Sauté for 3 to 4 minutes.

Add tomatoes and green chilies. Mix well.

Add turmeric, coriander powder, cumin powder, red chili powder, and ginger-garlic paste. Sauté for 3 to 4 minutes, then add 1/2 cup water (about 120 ml) and cook until the oil separates from the spices.

Add 2 cups water (about 480 ml), cover, and cook the mutton on low heat until tender.

Add garam masala and cook for 2 more minutes.

Add dried fenugreek leaves (kasuri methi), mix well, and turn off the heat after 1 minute.

Garnish with chopped cilantro and serve.
