Take pot,put oil and then add onion.

Make onion golden brown.when onion becomes golden,take out and make it paste by blend.

Then add fried onion paste,add bengan slices,make it sautés for 4 minutes.Also add all spices mentioned above.

After sauté began slices,add 3 tomatoes

Then cover pot with lid.after 25 minutes check gravy.

Make gravy thick or thin as according your taste.

Dish out in serving bowl.add few ginger and podina(mint leaves) on top of salan.

Aloo bengan salan is ready to eat with roti or rice
