Heat a pressure cooker on medium flame. Add 3 tbsp oil, once the oil starts to smoke fry the ginger and garlic. Add the whole spices and fry for a minute or until the spices splutter. Add coriander and green chillies to this mixture and grind it into a smooth paste

In the same pressure pan/ cooker add ghee. heat it for a minute and add bay leaf to it

Add mutton along with coriander powder, chilli powder, pepper powder and turmeric powder fry on medium flame until meat starts to release moisture and cook it for five whistles. Open the lid once it's cooled off

Add 1/2 the amount of ground masala to the meat which is half cooked along with salt. soaked rice and water.

Cook it for another 4 whistles

Your biryani is ready to be served with some raita
