Wash and cut the leeks length wise. In a pan warm the butter until golden and add the leeks. Mix well so that they get the flavour from the butter, bring heat down to low and cover with a lid

Keep an eye on them and if it gets too sticky add a splash of water and cover again. Cook until soft

When they are done add the parmesan to melt on top, cover and leave on the heat for a couple of minutes to let the cheese melt

TIP you can make it a full meal by adding a fried egg on top
