Ingredients

  1. 3 cupsalmond flour
  2. 2/3 cupgranulated erythritol based sweetener
  3. 2 tspbaking powder
  4. 1/2 tspsalt
  5. 3eggs
  6. 1/2 cupavocado oil
  7. 1/4 cupwater
  8. Juice from one orange
  9. Orange zest from that orange
  10. 1 tspvanilla extract

Cooking Instructions

    Preheat the oven 325 F, grease your cake pan

  2. 2

    In a bowl, whisk 3 cups almond flour, baking powder salt and 2/3 cup sweetener. Add 3 eggs. Oil water and orange juice with zest. Combine really good. Transfer batter into greased pan, fix the top.

    Bake 45 minutes or so. Until golden brown. Then use a rubber spatula to loosen it up, flip out on to a plate. Serve cool.

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore!
