Salmon & Prawns marinated in Gin Esque

As someone who hasn’t drank alcohol for 3 years and also being a Chef,recipes and dishes sometimes came hand in hand with alcohol.
Alcohol can always be burned off during the cooking process but a lot of people shy away using alcoholic based dishes because of medical conditions etc....
That’s why RECIPES FROM MY TRAVELS and THE ALCOHOL FREE CO. came together to work on a few dishes that replaced the alcohol with the non-alcohol alternative.
I was so pleased with the results and this dish itself, Salmon & Prawns marinated in Gin Esque a non alcoholic substitute....well the flavours were amazing.
Salmon & Prawns marinated in Gin Esque

Cooking Instructions

Marinade the salmon fillet and king prawns in the GIN ESQUE with slithers of fresh chilli and a squeeze of fresh lime for at least four hours but preferably overnight.

Pan fry the fillet of salmon skin side down only until the skin gets crispy,this way it will protect the fillet.Baste with a small knob of butter and a sprinkle of fresh dill.

Place the salmon into a preheated oven for about 4-6 minutes,I like my salmon cooked well...in the meantime flash fry the prawns with the marinade until cooked.

Take the salmon out of the oven,remove the skin gently and assemble the dish with the chilli prawns and a sprinkle of coriander. All the best and enjoy 😉

At the market, the tomatoes are starting to look pretty good, so I picked up a few. I was in the mood for salmon and got a small tail-end fillet chunk. The salmon set me thinking that dill might work with tomatoes. I'm not sure why I thought to brown the butter, but it makes sense in hindsight.
