Here in the north of the country, it's common for homes to be filled in the evening with the delicious smell of flour tortillas cooking. Usually, moms are preparing dinner for the family, and we have the best melting cheeses, perfect for making great quesadillas.

Shred the cheese.

Place enough cheese and a slice of ham on a flour tortilla. Fold the tortilla in half.

Heat a griddle or skillet and cook the quesadillas until the cheese melts, about 2 minutes per side.

Serve with tomato, lettuce, and pickled jalapeños.
