Oyster minced pork and eggplant

Marinade minced pork with garlic and soy sauce for min 30minutes. Add splash of Chinese wine optional

Prep vegetables - cut egg plant into small cubes. Dice mushrooms up small

Cook meat and aubergine for 5 minutes

Lower heat and cook for another 20minutes - add the mushrooms and garlic whilst cooking

5 mins before the end add oyster sauce
