Tomato rice is a mild South Indian rice recipe with tomatoes, chillies, onions and garlic. Tomato rice is a busy cook's best friend. If you have some cooked rice and ripe tomatoes ready, this one pot meal comes together in about 15-20 minutes. This is the easiest recipe you can make. You can enjoy this with raita or any vegetable dish of your choice. Some chips or papad will go well with it. It is best to use peeled whole garlic cloves. Ingredients

  1. 2 cupCooked Rice (Basmati)
  2. 2Tomatoes (Chopped)
  3. 1Onion (Chopped)
  4. 1 tspGhee
  5. 1 tspOil
  6. 1/2 tspMustard Seeds
  7. 1 tspUrad Dal
  8. 1 tspChana Dal
  9. 1/4 tspCumin Seeds
  10. 1/4 tspFennel Seeds
  11. 2Cinnamon Sticks
  12. 1Bay Leaf
  13. 4-5Garlic cloves (Minced)
  14. 2Green Chillies (Slited)
  15. 1/2 tspCumin Powder
  16. 1/4 tspTurmeric Powder
  17. To tasteSalt

Steps

  1. 1

    Heat the oil and ghee in a pan. Add mustard seeds and allow it to crackle. Add cumin seeds, fennel seeds, cinnamon sticks and bay leaf.

    Add urad dal and chana dal and saute till the dals turn golden in colour.

    Add the onions alongwith the green chillies.

    Let the onions saute to a golden brown and then add the garlic, cumin powder and turmeric powder. Saute for 30 seconds for the garlic to get toasted.

    Now add the tomatoes and salt and cook on low flame.

    When the tomatoes begin to cook and turn soft, mash it with a vegetable masher. In about 5-7 minutes you have a mushy tomato paste mixture.

    Turn off the heat. Add the cooked rice.

    Mix well and let the rice sit for atleast 30 minutes before serving.

    Serve tomato rice warm with raita or any vegetable curry of your choice. Some chips or papad will go well with it.
