Soak the tiger nuts in water for about 2 days to rehydrate them. Discard any that float to the top, as they are too dry and not usable.

Drain the tiger nuts and place them in a blender with 1 cup of very cold water. Blend well, then gradually add more water until the blender is full, continuing to blend thoroughly.

Strain the mixture through a fine cloth or nut milk bag, then add the remaining water and shake or stir well.
