Sausage, Pork & Mustard Mini Pies

What could be better on your buffet than a a little bit of pie greatness! These mini pork, apple and mustard pies are the perfect addition to any celebratory lunch and really pack a punch! Better than that- they are super simple to make (no frying required just chopping and mixing before letting the oven do its job). They use pre rolled puff pastry- I feel like I am a fiend for puff pastry at the moment but it is actually in abundance in the shops and lets face it…NOBODY wants to make puff pastry from scratch eek! Ingredients

12 servings
  • 400-450 gpork sausages
  • Handfulchopped chives
  • 1small chilli diced
  • Teaspoonmustard
  • SplashWorcester sauce
  • 1red onion, peeled and finely diced
  • 1large egg (beaten)
  • salt
  • black pepper
  • Puff pastry, ready rolled
  • 2apples cored and cut into quarters

Steps

  1. 1

    Preheat oven to 200°C.

  2. 2

    Skin your sausages and mix the filling with the chives, chilli, mustard, Worcester sauce, onion and egg. Season.

    Butter your muffin tin so that the pastry doesn’t stick. Cut out between 8 and 12 pastry circles to fit the muffin tin and line with the pastry ensuring to tuck in, and cut off any excess overhang.

  4. 4

    Split the sausage mixture between each ensuring to fill nearly to the top.

  5. 5

    Cut each quarter of apple into thin slices and arrange the slices on top of the sausage mixture in a swirl- see photo

  6. 6

    Bake the pies for 25-30 minutes until the sausage meat is cooked and the slices of apple are beginning to catch.

  7. 7

    Allow to cool for 15 minutes before removing from the muffin tin. Use a palette knife to go around the edges to ensure your pastry has not stuck. This will then make the pies easier to lift out.
