Homemade mayonnaise

So I ran out of mayonnaise at home and I decided to try on my own because why not 😂
I googled on how to make homemade mayo and I realized that I had all the ingredients stirring at me.
I researched and got tired of seeing all the ingredients online so I decided to try mine without so many things like mustard because I’m not really a fan of it.
So if you want to try mine here it is

Steps

Add the eggs, lemon, salt, black pepper and cinnamon in the blender and mix until creamy

Gradually start adding the oil in small amounts to start the emulsion process. The first addition should be gradual. Wait about 30 seconds between addition. When the sauce has thickened, you may add the oil in a thin stream. Do not stop the machine at this point until it is well incorporated

Stop the machine and check for taste and consistency

If the mayonnaise is too thick, process in additional drops of lemon or water to thin.
if too thin, process additional oil for a thicker sauce
