Cookies are really very easy to make and they need very few basic ingredients. I had some dry cranberries in my freeze. Made these cookies with them. They came out superb.. soft and flavourful. Actually wanted to make oat cookies with cranberry. But no oats in the pantry. Whole wheat flour is missing from the market here. So baked with all-purpose flour.

Ingredients

  • 2 cupAll purpose flour
  • 1 cupdehydrated Cranberries
  • 1/2 cupsoft Butter(unsalted)
  • 1 cupregular sugar or 1/2 cup each white and brown sugar
  • 1Egg
  • 1 tablespoonHoney
  • 1 tablespoonfresh or processed Cream(optional)
  • 1/2 teaspoonVanilla essence
  • 1 teaspoonBaking powder

    In a big mixing bowl add in soft butter and sugar. I used 1/2 cup white and 1/2 cup brown sugar.

    Mix well with a spatula and then add in 1 egg, honey and vanilla essence.

    Mix and make a smooth batter.

    Take 1 cup of dry cranberries and add into the batter. You can use other dehydrated fruits of your choice or even you can add chocolate chips in place of dehydrated fruits.

    Sieve 2 cup maida and baking powder. Add to the batter.

    Mix well using your hand and then add in 1 tablespoon of cream for richness.

    Now mix well to combine everything well to make a soft dough.

    Keep the dough in the refrigerator or so that it becomes a little hard.

    Take out the dough from refrigerator and make lemon size cookies and keep them in a baking tray lined with baking sheet. Leave some gap between the cookies as they will be double in size while baking.

    Preheat oven at 180 degrees C for 10 minutes.

    Bake the cookies in the preheated oven for 18-20 minutes or until the cookies start changing their colour to brown. Don't overbake them. The cookies will be darker after taking out from oven due to their inner heat.

    Carefully transfer the cookies with a baking sheet from the hot tray to stop the baking process.

    Let the cookies cool down completely before storing them to an airtight container. The cookies will be a little soft in texture. They taste really amazing.

    Just take a cup of tea or coffee and enjoy the flavourful homemade cookies.
