Today, both of us woke up sick. We didn’t want to hang out with friends at the beach because we didn’t want to spread our cold, just like I don’t like it when people visit me while they’re sick.
We came back early and I made this dish. I had a few beers to help me out since the medicine I took didn’t do anything for me.
We had lunch with a little wine—maybe it’s psychological, but it made me feel better.
Ask me the same question tomorrow. Hahahaha.

Ingredients

  • for the ribs
  • 4 1/2 lbspork ribs (2 kg)
  • 1 tablespoonvegetable oil
  • 2garlic cloves, finely minced
  • 1 teaspoonsalt
  • 1/2 teaspoonground cumin
  • 1 teaspoondried oregano or 2 teaspoons fresh oregano
  • 1/4 teaspoonmerkén (smoked chili powder)
  • 1 tablespoonchopped parsley
  • 1/2 teaspoonpaprika
  • 1 cupdry white wine (240 ml)
  • 2 cupswater or chicken broth (480 ml)
  • 1/2chicken bouillon cube
  • 1bay leaf
  • PILCO-STYLE CRANBERRY BEANS
  • 3 cupsshelled cranberry beans (about 500 grams)
  • 3 cupsunsalted chicken broth or water (720 ml)
  • 1chicken bouillon cube, no MSG
  • 1 1/2 teaspoonsvegetable oil
  • 1medium onion, diced
  • 2garlic cloves, minced
  • 1carrot, diced
  • 1/2red bell pepper, diced
  • 1/2green bell pepper, diced
  • 1 cupbutternut squash, diced (about 150 grams)
  • 1/2 teaspoonpaprika
  • 1 1/2 cupscorn kernels (about 240 grams)
  • 4tomatoes, diced
  • basil pebre
  • 1/2 cuponion, diced
  • 2large tomatoes (Roma or similar)
  • 1garlic clove, finely minced
  • 2green chilies or turning red (for more flavor)
  • 1 1/2 teaspoonsred wine vinegar
  • 1/2 teaspoonsalt
  • 1 tablespoonolive oil
  • 1 tablespoonbasil, cut into thin strips (do not chop)

Steps

    RIBS - 4 SERVINGS

    Pat the pork ribs dry with paper towels.
    Measure and chop all the ingredients for the recipe.
    In a small bowl, mix together the oil, minced garlic, salt, cumin, oregano, merkén, parsley, and paprika.
    Rub the ribs on both sides with this seasoning mixture.
    Place the ribs in a roasting pan with the white wine, water or chicken broth, bouillon cube, and bay leaf.

    Preheat the oven to 325°F (162°C).
    Roast the ribs in the oven for about 1 hour and 45 minutes. Make sure the pan never dries out completely so the bottom doesn’t burn.
    Cut the ribs and serve with the cranberry beans and basil pebre.

    PILCO-STYLE CRANBERRY BEANS - 4 SERVINGS

    In a large pot, heat the oil and sauté the onion, garlic, carrot, bell peppers, and squash together. Add the paprika and cook for 1 minute.
    Add the beans with their liquid, bring to a boil, reduce the heat, and simmer for about 5 minutes.
    Add the tomatoes, salt, and pepper, and cook uncovered until the beans are thickened to your liking.
    Serve the beans with the roast ribs and basil pebre.

    BASIL PEBRE - SERVINGS: 4
    Measure and chop all the ingredients for the recipe.
    In a small bowl, mix all the ingredients together and serve.
    NOTE: Don’t cut the basil until just before serving so it keeps its color and fresh flavor.
