Steps

Deep fry cubed potatoes until *almost* done. Keep aside. (I do this first instead of stir frying all at once because I don't quite like the taste of undone potatoes)

In the same pan after straining the excess oil used in frying, add 2 tablespoons oil & pour in the chopped vegetables.

Add your spices and stir fry on low to medium heat for 3-4 minutes. (Soy sauce may increase the saltiness of your food so take note when seasoning)

Add your semi fried potatoes, drizzle a bit of oil if needed to prevent burning. Stir fry for 2-3 minutes.

Serve hot (as a side dish mostly). Enjoy!
