For me, this is like the child of a flan and a cheesecake… 🤣🤣 Let me introduce you to these cheese flans: delicious, easy, and super creamy. The key to getting them really smooth is a very low oven and patience. They take a little while, but the amazing texture is worth it. Serve them with whatever you like—I topped mine with dulce de leche, but honestly, I prefer them just with whipped cream. I made these in individual molds, but you can also make one large flan.

Ingredients

  • For the caramel
  • 1 cupsugar (about 200 grams)
  • 1/2 cupvery hot water (about 120 ml)
  • For the flan
  • 3/4 cupheavy whipping cream (about 200 grams)
  • 7 ozcream cheese, like Philadelphia (about 200 grams)
  • 2/3 cupsweetened condensed milk (about 200 grams)
  • 3eggs

  1. 1

    First, make the caramel by placing the sugar in a skillet. Do not stir, so it doesn’t crystallize. Let it cook until it turns a light golden brown. You can gently swirl the pan to help the sugar melt evenly.

    Carefully add the hot water—it may splatter a bit. Pour the caramel into your chosen molds.

  3. 3

    In a bowl, whisk the room temperature cream cheese with the sweetened condensed milk. Add the eggs, then the heavy cream, and mix until smooth.

    Bake in a low oven using a water bath: place the molds in a baking dish with hot water. Bake until set—a toothpick inserted in the center should come out clean.

  5. 5

    Let cool. To unmold, you can briefly warm the molds over heat to help release the flans more easily. Everyone in my family loves these… who will you share them with?
