Marination : chicken + turmeric + Ginger garlic + Lime juice + salt, mix well to let the masala seep into the chicken

Rest the marinated chicken in the fridge for about 30 minutes

Heat some oil in a frying pan, once the oil is hot, add a Cinnamon stick n wait for it to sizzle/roast, add a few Cloves - 2or3 and 2 sprig of curry leaves, fry it until the curry leaves become a little crisp

Add the Onions, a pinch of salt to avoid any burning, keep the flame on Sim and toss the Onions around, until it has caramelized n become nice n golden brown

Now add some green chillies up to your spicy needs, add the marinated chicken, n saute for about 2-3 minutes

Add the coriander powder, crushed pepper powder and cook the contents on a low flame, stir the contents from time to time, you will observe the curry begins to come together from the sides of the pan, if the pan gets too dry, you may sprinkle some water as and when you see the dryness in the pan, this might take approximately 5mins

Now add a quarter cup of water - when it begins to boil, cover the pan with a lid, cook on low flame, until the chicken is cooked n tender

Now remove the lid, cook the contents on medium flame until all the water evaporates

Sprinkle three quarter of the chopped coriander n cook for about 1-2 minutes

Before you eat - add some Lime juice, a tsp of crushed pepper powder and the remaining quarter of the coriander leaves
