Spicy Ghughra is the famous dish of Jamnagar in Gujarat. Stuffing is of potato masala with spices and it shape like Ghughra or gujiya. It serve with it's special 2 types chutney sweet and hot which add flavour on it.

Spicy Ghughra is the famous dish of Jamnagar in Gujarat. Stuffing is of potato masala with spices and it shape like Ghughra or gujiya. It serve with it's special 2 types chutney sweet and hot which add flavour on it.

First of all take flour in a bowl, add salt and oil and mix well. Then add water and Knead a tight dough. Apply oil Knead it well and rest it for 10 mins.

For stuffing take messed potato in a bowl. Add boiled peas. Now add salt, sugar, amchur powder, garam masala, black pepper powder, coriander powder, coriander leaves, garlic chilli paste. And mix it well.

Now take a dough Knead it once. Take a small portion and roll small round poori. Add stuffing in it half portion and fold it on upper side. Now on edge give the shape by pressing small portion on edge and folding it's corners till end. Or other methods is you can press it with folk and give design and other method is you can use mould. Apply water in between two edge while folding so that it should not open during it frying. Make same from all remaining dough.

Now heat the oil for deep fry. Once it hot enough lower the stove flame and add all Ghughra that we made and fry it in slow to medium flame till it becomes golden brown. Fry all the Ghughra.

Now for sweet chutney in a pan boil water. In small bowl take 1tbspn ara lot/corn flour add 2 tbspn water on it and mix well. When water boil add jaggery or sugar in it. When it dissolves in water add slurry of ara lot in water and mix it well. Avoid lumps here. And switch off the flame. When it come to normal temperature. It also become thick consistency like chutney. Add salt and red chilli powder or you can add red colour in it. Sweet chutney is ready.

For hot spicy chutney. In a mixture grinder jar take soaked dry chilli in water, add garlic, salt and red chilli powder. Grind it well. Then add some water and grind it well as water mix with paste. Red hot chilli chutney is ready.

For serving take 3 Ghughra in plate press it in the middle portion of it so that we can add chutney in it. Pour sweet chutney then hot spicy chutney on Ghughra. Garnish it with masala sing coriander, sev and chat masala. You can even add green coriander chutney in it.
