Clean and boil the tripe
* Wash thoroughly.
* Boil in salted water for 1–2 hours (or pressure-cook for 30–40 minutes) until tender - 2
Make the sauce
* Heat oil in a pot.
* Fry onions until golden.
* Add garlic and ginger; cook for 1 minute.
* Add tomatoes and tomato paste; cook until the mixture thickens. - 3
Add tripe
* Mix in the cooked tripe.
* Add enough water or stock to partially cover.
* Simmer for 30–45 minutes so the flavors penetrate the meat. - 4
Season
* Stir in turmeric, paprika/chili, curry powder, coriander, salt, pepper, and stock cube.
* Cook for 2–3 minutes. - 5
Finish
* Adjust seasoning.
* Simmer until the oil rises to the surface and the sauce is rich and glossy, similar to the dish in your photo.
