Best of the waste! Today this saying has become true for this wonderful bake. Today, I had no such plan to bake a cake but out of a sudden an idea clicked and just gave it a try. Trust me this tasted so awesome, original and the smell just rushed into the heart. Well, most of us might be extracting ghee out of the Malai from milk stored in the refrigerator. But what do you do with the residue (called jarathi at my home) left behind ghee. I sometimes mix sugar and eat but most of the time it goes wasted. But today since the Malai was just 5 days old and was extracting ghee. So, decided to make a cake with this.

Ingredients

45 minutes
6 servings
  • 1 cupwhole wheat flour
  • 1/4 tspbaking soda
  • 1 cupresidue of ghee (jarathi)
  • 1/4 tspsalt
  • 1/2 tspbaking powder
  • 1/4 cupmilk
  • 1/2 tbspghee
  • 1/2 cupsugar

Steps

45 minutes
  1. 1

    Grind sugar, and residue in a mixi. It will be coarsely grinded and mix milk to make a batter.

    Sieve wheat flour, baking powder, baking soda and salt in a bowl. If you are using the same bowl in which ghee was extracted then no need of adding extra ghee as it will have enough ghee on the walls of the bowl. If doing in another bowl or vessel add 1/2 tbsp ghee.

    Mix flour mixture well with the batter. Grease a cake tin. Pour the batter into it. Keep aside for 5-10 minutes to let it settle. Preheat your oven and bake for 35-40 minutes.

    You can have it with tea or as a snack in the evening.

    Note: Residue used should be light brown or dark pink. Do not use dark burnt.

    Also, would suggest Malai used for extracting ghee should not be more than 7 days older.
