Sopes with Salsa, Sour Cream, and Cheese

If the masa is a bit dry, add a little water to soften it. The dough should be firm and easy to handle.

With clean hands, take a portion of the masa and roll it into a ball. The size depends on how big you want your sope.

Flatten the masa ball with your hands until it looks like a tortilla, or use a tortilla press. Make sure it's a bit thick so you can form the edges of the sope.

Place the masa round on a hot griddle (comal) without oil, so it doesn't get too crispy or stick.

Flip it and check to make sure it cooks through.

Once cooked, remove from the heat and, using a cloth napkin, pinch the edges to form a border around the sope.

When all your sopes are ready, return them to the griddle and top with salsa, sour cream, and shredded cheese.
