Steps

Finely chop the onion, garlic,carrots,French beans and tomatoes and coriander.

In a pot put in the butter and oil and fry the onions and garlic on low heat.When softened add the minced meat and salt to taste and fry, stirring continuously. When the meat cooks add tomato paste and let it cook for a minute then add the tomatoes,cumin and paprika.

Once the tomatoes cook through and soften,add the carrots,french beans and the bay leaves. A little water can be added incase the food is sticking to the bottom of the pot.Cover and let it simmer for approximately 15-20 minutes or until the vegetables are soft.In a separate pot boil the macaroni as per packet instructions or when the pasta has some slight resistance when chewing.Drain the pasta water when done.

Finish off the stew with chopped coriander.Remove the bay leaves.In a bowl mix the cheese and breadcrumbs.Line a roasting or baking dish with butter at the base and sides.pour in some macaroni and mix in the minced meat stew.Top with the cheese and breadcrumb mixture.

Place in an oven on broil to melt the cheese for approximately 10 minutes.Serve when hot.
