Ingredients

  • 3russet potatoes, shredded
  • 1/3 cupold cheddar cheese, shredded
  • 1/4 cupscallion/chives, fine cheffonade
  • 1/4 cupBacon, reduced and fine chop
  • 1 tbspCurly parsley, fine cheffonade
  • Herbs de provence, salt, pepper
  • 1 tspbaking bowder
  • Flour
  • 1large egg

Steps

  1. 1

    Rinse shredded potato to remove starch, squeeze dry

  2. 2

    Mix potato, bacon bits, green onion, parsley, egg and some flour together.

  3. 3

    Press into thin patties, and coat with flour and baking powder mixture. Then fry at 350F until golden brown.

  4. 4

    Bake at 375 until cooked through.
