Ingredients

  1. 3russet potatoes, shredded
  2. 1/3 cupold cheddar cheese, shredded
  3. 1/4 cupscallion/chives, fine cheffonade
  4. 1/4 cupBacon, reduced and fine chop
  5. 1 tbspCurly parsley, fine cheffonade
  6. Herbs de provence, salt, pepper
  7. 1 tspbaking bowder
  8. Flour
  9. 1large egg

Cooking Instructions

    Rinse shredded potato to remove starch, squeeze dry

  2. 2

    Mix potato, bacon bits, green onion, parsley, egg and some flour together.

  3. 3

    Press into thin patties, and coat with flour and baking powder mixture. Then fry at 350F until golden brown.

    Bake at 375 until cooked through.
