Ingredients

  1. 10 smallyukon gold potatos, blanched for 5 minutes in boiling salted water, drained and cut in half, keep the peels on.
  2. 10Thin slices bacon, cut in half
  3. 1/2 cupGrated parmesan cheese
  4. 1/2 tspgarlic powder
  5. 1/2 tspcajun seasoning
  6. 1/2 tspblack pepper
  7. 1/2 cupsour cream
  8. 2 tbspchopped chives

    Preheat oven to 425

    in a large bowl combine parmesan cheese, garlic powder and cajun seasoning. Add potato halfs and gently toss to coat with cheese and spices. Wrap a piece of bacon around each potato half, secure bacon with a toothpick.Sprinkle with the black pepper.

    Lay in a single layer on a baking sheet, I lined mine with foil for easy cleanup. Bake in oven about 45 minutes or until bacon is crisp, turning to nrown all sides.

    Meanwhile combine sour cream with chives in a bowl for dipping.

    Transfer potatos to a platter and serve with sour cream for dipping.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
