I’ve always been curious about miso carbonara after seeing various cooking reels on it, so I decided to try

Boil the udon noodles. Udon boils very quickly, so expect them to be done in less than 10 minutes. Drain and set the udon aside

Chop the spam into small cubes. In a nonstick pan on medium heat, add oil and cook the spam until slightly brown and crispy. Set aside once done.

Finely chop the onions and garlic cloves and then sautee. Turn the heat down once golden

Make the sauce: in a bowl, add 5 egg yolks, ~ 1/2 cup of parmesan, a good amount of black pepper, and 1/2 of miso paste. Mix thoroughly until it becomes a smooth paste. Add 1-2 tbsp of water to further liquify the sauce.

Back to the pan, turn it on to the lowest heat and add the udon to the onions and garlic.

Pour the sauce over the udon and slowly mix. Do not mix too fast or increase the heat or else the eggs might scramble. Keep it at a low heat and a slow mixing pace to keep the sauce at a nice, creamy liquid state.

To the sauce, add 1/4 onion powder and 1/4 garlic powder to add further flavor. Add more black pepper as well if you’d like

Add the spam cubes to the pasta and mix into the sauce

Chop 2 green onions and sprinkle as a topper.
