1large Aubergine
Sour cream
Chopped tomatoes
Chopped Parsley
Chopped spring onions
Chopped coloured pepper
1 teaspoonminced garlic
Salt
Pepper
Cumin
Grated Cheddar cheese
1 tbsvinegar
Chilli powder

Steps

Cut aubergine into slices

Fry them in little sunflower oil

Prepare the mix of tomato, onions minced garlic, Parsley and coloured pepper and add the spices...then stir well in a sauce pan on medium heat

Put them on the aubergine slices as in the picture

Add the sour cream and grated cheddar...you can add olives as well
