I already had rehydrated soy protein, so season it as usual with finely chopped garlic and onion.

You can fill them with just soy protein, but this time we'll add egg. Once the soy is well sautéed, add a couple of beaten eggs and cook, but don't let the mixture dry out.

Place the filling in the tortillas and roll them up like little tacos.

Your sauce should be ready. Blend the tomatoes with a clove of garlic and a piece of onion. I added a small piece of chili pepper just for flavor. Sauté some onion for your sauce.

Let it simmer for about 5 minutes on low heat. It should look about like this when it's ready. Pour the sauce over your tacos and garnish with lettuce, sour cream, and cheese. You'll be licking your fingers!
