Plum Pistachio Shrikhand

This is absolutely an excellent alternative to the normal plain Shrikhand. This popular dessert can be made a bit fruity too with the addition of the pulp of your favourite Seasonal fruits. In this version I have used Plums that were ripe and juicy and was made by me two years back and since then it has been my favourite and I try my best to make it in every Season. I have used sweeter ones rather than the tangy ones. The colour says it all. I need not say much about the results as you all can see. This gorgeous looking dessert was equally amazing in taste and with the added crunch of slivered Dry fruits, it has that heavenly touch to it. You can use any Dry fruit of your choice but Pistachio flavour goes very well with this Plum flavoured Shrikhand. Stunning is the word for this.

Tie up the full fat yoghurt in a clean cloth at first. Place it in a strainer underneath which there is a bowl for collecting the whey. This whey can be re used in many a ways.

Place it in a clean and dry place on the kitchen counter if the weather is cold. Otherwise it is better to refrigerate it overnight. Next day, make a puree with the ripe and juicy Plums, powdered Pistachios and Sugar.

Add this blended puree to the hung curd or the strained yoghurt along with a pinch of cardamom or nutmeg powders. Mix well and top it up with pistachio slivers. Refrigerate until chilled. Serve this fruity delicious hung curd delight super chilled to enjoy it thoroughly.
