  • 1medium beet
  • 1large plantain
  • 1medium jicama, chopped
  • unsalted peanuts, to taste
  • juice of 1-2 oranges

  1. 1

    Boil the beet (be careful not to overcook it), then chop it into cubes. Also chop the plantain and jicama.

  2. 2

    Mix everything together, add peanuts to taste and the orange juice. Refrigerate before serving. It's a delicious and very refreshing salad.
