Cooking Instructions

Insert skewer sticks in centre of potatoes. Select potatoes that are long and thin. Rotate potato for easy insertion

To cut the potatoes hold the knife with slight tilt and rotate the potato slowly. Make sure that you cut potatoes till the centre of stick is felt, if not than slices will not separate

Spread the slices slowly. Small potatoes are relatively easy to cut. Put them in water so that

Take a big mouth vessel and mix all dry ingredients for batter. Slowly add water to get consistency which is slightly thinner than that of bhajiyas batter.

For the dressing you could use mayonnaise. I have made dressing using hung curd. It will not at all taste like curd and is very delicious.

Grind mint and coriander leaves. Add this to the hung curd along with Oregano, chilli flakes and salt. If it is very thick, than milk can be added to make the consistency thin. I have added 1 spoon of milk and poured in piping bag.

Now coat the potatoes with the batter and deep fry them till it becomes crispy

Sprinkle some chat masala and peri peri on it and apply the dressing. Hot and spicy. It is ready to serve.
