One of my usual meals in my weekly rotation. Pretty simple and quick to make, especially if you're short on time. Can be eaten by itself or with any carb of your choosing. Enjoy!
Simple Sausage and Greens Stir-fry
One of my usual meals in my weekly rotation. Pretty simple and quick to make, especially if you're short on time. Can be eaten by itself or with any carb of your choosing. Enjoy!

In a pan over medium-low heat, add one tablespoon of butter or oil.

Once heated, add in the sliced onions. (You can use any onion of your choice and any amount is fine, more or less -- you can also omit it as needed. In the recipe, I used one whole white onion.)

Once the onions have become fragrant and somewhat translucent, add in the sliced sausage. (The sausage can be any kind. In this recipe, I'm using beef sausage.)

Let it cook for approximately 5 to 10 minutes or so on medium heat. (Try not to stir it as much -- unless it's trying to burn, then please stir.) During this time, the sausage and onions will have a nice caramelized color to them.

(During this time, you can rinse off your bag of chopped greens in a colander to remove any potential debris or browned leaves/stems)

Once you've achieved your desired color for your sausage and onions, add in your greens!

Stir and let cook for about 10 minutes or so, or until the greens get to the desired tenderness.

Once done, season with salt and pepper to taste as well as any other seasonings you enjoy. (Typically, for this dish, I wait until the end in case the sausage is quite salty so that I can account for that. -- In this example, I used salt, pepper, garlic powder, and creole/cajun seasoning, but you can season it to your liking!)
