Ingredients

4 serving
  1. for Coating:
  2. 1/2 cupGram flour
  3. 1 tablespoonRice flour
  4. 1/8 teaspoonTurmeric powder
  5. PinchBaking soda
  6. to tasteSalt as per taste
  7. as required Water
  8. for Stuffing:
  9. 2big Potato (boiled, peeled and mashed)
  10. 1 tablespoonOil
  11. 1/2 teaspoonMustard seeds
  12. 4-5Curry leaves
  13. PinchAsafoetida
  14. 4-5Garlic paste
  15. 3Green chilli paste
  16. 1/4 teaspoonTurmeric powder
  17. 1/2 teaspoonLemon juice
  18. to tasteSalt as per taste
  19. leavesas required Finely chopped Coriander
  20. for Chutney:
  21. 2 clovesGarlic
  22. 1 tablespoonKashmiri red chilli powder
  23. to tasteSalt as per taste
  24. for Vada:
  25. as required Oil for frying
  26. as required Pav

Cooking Instructions

    For a coating : In a bowl, add Gram flour, Rice flour, Turmeric powder, salt and baking soda. Mix well and add water. Prepare batter with medium consistency which should not have any lumps.

    For stuffing: on Medium flame heat a pan. Add oil, Mustard seeds. Let it sizzle up. Add Curry leaves, asafoetida, Garlic and chilli paste. Mix it well and fry for a minute. Add turmeric powder and turn off the heat. Now add mashed potatoes, lemon juice, salt and coriander leaves. Once it is cooled, take a big spoon of it and roll it to round shape.

    For Vada : Medium heat the Oil. Take the prepared Gram flour batter and mix it again. Dip the potato Vada in to batter and coat it from all side and fry it. Fry from all side until Vada gets reddish colour. Once done, remove from oil.

    For Chutney : Add remaining batter into oil (like a boondi) and fry until it is crisp. Take it out on tissue paper. Transfer it into blender and add Garlic, Red chilli powder, salt. Blend it into coarse powder.

    For Serving : Apply some Tamarind chutney on one side of pav, put Vada and red chutney on it. Serve it with fried salted green chilli.
