A very easy and budget-friendly recipe for a quick dish.

Rinse the bulgur, then soak it in a small amount of water and let it sit for a short time.

Add salt, dried mint, black pepper, paprika, cumin, and a pinch of red pepper flakes.

Mix with the bulgur, then add the grated tomato, tomato paste, and hot pepper paste. I added some lemon zest, but you can skip it. Knead by hand so the bulgur absorbs the tomato juice. Then add the onion, fresh mint, and parsley, and continue kneading. You may not need extra water, but if you do, add just a little.

When the bulgur is soft, shape the mixture and place it on a serving plate. Garnish with parsley and mint. Enjoy!

I didn’t add oil to the recipe because it’s served with olive oil (dip the pieces in olive oil before eating). If you add lemon zest, use just a little, as too much can make it bitter.
