Ingredients

60mins
8/ 4 generous
  1. 1pkt of ready rolled short crust pastry
  2. 2 tablespoonsseedless raspberry jam
  3. 200 mlready made chilled custard
  4. 300 mlwhipping cream
  5. Table spoondesiccated coconut
  6. 1 punnetfresh raspberries

    Heat oven 180 fan

  2. 2

    Line a 20cm baking tin with the pastry line with baking paper and fill with baking beans. Rice will work. Bake blind for 20 mins

  3. 3

    Remove baking beans and paper place back in the oven and complete cooking should be only 5 mins

  4. 4

    When cooked leave to cool completely.
    Whip the cream to firm peaks not too much as it will turn to butter.
    Fold in the custard

  5. 5

    Chill

  6. 6

    Spoon the jam in to your COLD pastry case smooth over the base.
    Pile in your cream mixture decorate with the raspberries and chill.

  7. 7

    Just before serving sprinkle with coconut lightly toast if you like.

I have read your recipe & method and I cannot see where you add the custard. Is it mixed with the whipped cream.
