Seive together the flour, baking powder, baking soda, cocoa powder and cinnamon powder.

Grind the sugar and make powder, keep aside.

Beat the eggs with salt.

Add the vanilla essence and whisk again for about 3 minutes.

Now goes the powdered sugar and mix well for about 5 minutes

Add the vegetable oil and mix for a minute

Add the flour mixture and mix it by gently folding

Add the carrots and nuts and fold again

Transfer to a greased tin

Bake for 40 minutes at 180°

Do a knife check when done.

Cool it before serving.

I added a layer of sugar glaze on top of the cake by mixing 2tbsp sugar with 1/2tsp water (optional)
